Pavement does business a different way. We hold no allegiance to any one roaster. We work with many different roasters to provide a coffee experience that is memorable for a plethora of reasons. Like different wineries from different parts of the globe, each roaster is capable of capturing a different spectrum of taste from the coffee bean. We choose to sell only single origin coffees instead of blends. We want the customer to be able to taste the true characteristics of their desired bean. Single origin coffee is a selection of coffee from a single coffee farm, processed one way, and roasted with one specific roast profile.

For more than a decade, Bagel Rising has offered Bostonians award-winning kettle boiled bagels baked from scratch. Espresso Royale has developed a reputation among locals, tourists and students for being a great place to relax, meet friends, study or just re-fuel. Pavement benefits from the experiences and lessons learned at both Bagel Rising and the three Espresso Royale stores. The result is a café of distinct character.
